Tirokafteri is a dip made of five ingredients (feta cheese, olive oil, hot green pepper, vinegar and salt).
The more traditional recipe includes a mixture of Greek cheese (fetta, telemes, mizithra and anthotiro (ricotta cheese). It can also include other dairy products such as milk, yogurt or grated tomato to temper the hot pepper.
It has a creamy texture and it can be either spicy or not spicy as well as white or pink. It is an ideal dip to escort crackers, pitta bread, souvlakia or anything you like.
The word tirokafteri comes from tiros which means cheese and kaioi which means burns. In other places it is called with various other names.
