Easter biscuits (koulourakia) are made during the end of the Holy Week and are perfect for having on the side with a cup of coffee or tea. There are many recipes for Easter koulourakia which include orange juice and orange zest, ammonia, almond slivers and sesame seeds.
Koulourakia are made from an orange buttery dough, and hand rolled into a variety of shapes such as braids, the letter S or rings. The ingredients include unsalted butter, sugar, eggs, milk, vanilla extract orange zest, baking powder flour and water. It takes about an hour to prepare the dough and make the shapes. They are then egg glazed on top and usually sprinkled with sesame seeds . The cooking time is about 30 minutes.
