They would take he carob honey and water it down to create the kiantzali. The workers and famers would drink this during the harvest season in summer, with pieces of bread as a filling meal.
The procedure of making the carob honey, began with selecting the large carobs and washing them. Then the carobs were hit with a stone and placed in water for 3-4 days in order to rise. The carob juice was then heated in a large copper cauldron until it became thick. It was then left to cool down and was placed in glass or clay jars.
