Mousakas is a dish made of minced meat, aubergines or potatoes and béchamel cream. It can be found in Greece, Cyprus, different countries in the Balkans, in the Middle East, central Europe and Turkey.

In the Greek version of Mousaka, the aubergines are cut into thin slices and fried lightly in olive oil. Then they are placed in a pan with a mixture of minced meat (lamb or beef), onions, tomato sauce and spices. On the top béchamel cream is placed with breadcrumbs or grated cheese.

Another version of Mousaka is made with potatoes cut into thin slices and lightly fried before placed on the bottom of the pan instead of aubergines.

A vegetarian version of Mousaka also exists where the béchamel cream and the minced meat are made from soya.
